Adobo Chicken

Ingredients:

  • 1 lb of skin-on, bone-in chicken thighs with 3 tablespoons of soy sauce
  • 30 ml of vinegar
  • 0.5 cups of water
  • 6 minced garlic cloves
  • Black peppercorns, 1 teaspoon
  • 1 bay leaf, 2
  • 2/TBS of frying oil

Instructions:

This classic Filipino dish is sure to be a hit at any meal, with its savory and tangy flavors and juicy chicken thighs.

  1. Combine the soy sauce, vinegar, water, garlic, black peppercorns, and bay leaves in a large bowl.
  2. Toss the chicken thighs with the marinade in the basin after adding them. For at least an hour or up to overnight, cover and chill.
  3. In a big skillet, heat the cooking oil over medium-high heat. Chicken should be taken out of the marinade, with the marinade being saved for later.
  4. Cook the chicken in the skillet with the skin-side down for about 5 minutes to get the skin golden and crispy. Cook the chicken for an additional five minutes on the opposite side.
  5. Bring to a boil the chicken in the skillet with the leftover marinade. Simmer for 20 to 30 minutes, or until the chicken is thoroughly cooked and the sauce has thickened, on low heat.
  6. If preferred, garnish with finely chopped green onions and serve hot with steaming rice.
